Monaka Shells
When we think of Monaka, it’s a Japanese sweet made of azuki bean jam filling sandwiched between two thin crisp wafers made from mochi.
The jam can be made from azuki beans but also with sesame seed, chestnuts, or rice cake. Modern monaka can also be eaten filled with ice cream.
Our Monaka shells are without filling, therefore using these empty “monaka shells”, one can use these as a vessel to hold your culinary creations – Monaka shells are very delicate, it almost melts in your mouth, perfect for your delicate dish.

Mozuku is a type of seaweed that grows only in shallow clean tropical water. There are many different types of mozuku, but the two main ones on the market are Okinawa mozuku (thick Mozuku). Over 90% of the mozuku distributed in Japan is the Okinawa Mozuku. It has a nice little crunch when chewed. Mozuku is most commonly served in a vinegar-soy sauce dressing; if not seasoned, it can also be made into tempura or used in varieties of recipes.

Battera are a type of pressed sushi made with mackerel originally from Osaka. It’s made by stacking vinegar-pickled mackerel with finely sliced layers of mackerel and kombu; these layers are so thin that they can be practically seen through. The name ‘battera’ comes from the Portuguese word ‘bateira’, which means small boat. The addition of Kombu is unique to the regional Osaka cuisine.
